Today is the new moon of May. With the long weekend over and the start of summer behind us, our special juice for May is " Tomato Gazpacho."

This juice is popular every year in early summer. It is a refreshing and delicious tomato juice with the addition of cucumber, which is in season and is what your body craves at this time of year. It is a blend of ginger and lemon for a refreshing and delicious drink. It is also a popular menu item at Sunshine Juice, and is delicious for the upcoming hot and humid season!

As you can tell from the name "Tomato Gazpacho," it's a juice that's almost like soup. But what exactly is the difference between soup and juice?! I previously held an event called "Juice Gathering" with chef Shirota Fumiko, who lives in Tottori. Using the same ingredients, Shirota made soup and I made juice, each exploring the boundary between them. What is the difference between soup and juice? That was the question that everyone who participated felt. This event was very interesting, so I would like to hold it again. Please join me then and let's find out together. Haha.

"This juice tastes like soup!" is a comment that makes me very happy. I always want to create "juice" that goes beyond the boundaries of what is generally considered "juice" and let everyone enjoy a new juice experience.

 

From the end of April to the beginning of June, I will be serving Sunshine Juice at the vivo barefoot store in Kitaoji, Kyoto. Here, I will squeeze juice using the ingredients available at that time to suit the physical condition of each customer. This is also quite a challenging project, but I want to squeeze and blend the ingredients that are available at that time to deliver the nutrition and taste that the customers who come at that time are looking for, and I am putting it into practice. The other day I used Japanese pepper that I found in Ohara, and the feeling of it waking you up was an energy drink. I will be serving the highest quality juice, so please stop by. During that period, I will be living in the Ginkakuji area of ​​Kyoto. It is very quiet in the mornings and evenings, and the mountains are very close by. I meditate early in the morning, take some juice with me and climb Ginkakuji, soak up the sun on the mountain, drink the juice, go down the mountain, and then head to the store. And finally, a compost station has been completed in Kyoto. We created a compost base at Kinrinji Temple in Muko City, which is also the home of Fukui Jo , who always helps us out when we run Sunshine Juice in Kyoto. We put in the pomace and let the microorganisms ferment it and turn it into compost. Now, instead of throwing away the food waste from the store, we can turn it into soil and use it to produce powerful vegetables and fruits. It's really refreshing and nice to have this, and I'm happy to be able to feel that the plants are happy even if it's just a small effort. I would like to work on composting food waste and this cosmic circulation as a community with more and more people.
