4/22 Earth Day at ACE HOTEL KYOTO

4/22 はEarth Day。エースホテル京都にて、京都近郊及び日本各地の生産者から届く旬の野菜や果物を使ったフレッシュ！コールドプレスジュースバーと、コンポストのワークショップを開催しました。

サンシャイジュースを飲むことは地球のエネルギーをシンプルに、ダイレクトに体に取り入れられる行為。シンプルに感じる「ジュースを飲む」行為もその体感をじっくり感じてみる。体の細胞に自然のエネルギーが染み渡り活力が湧いてくる感覚。

さらにその背景、植物が育つ環境のことや土地のことなどに想いを馳せながらジュースを飲んでみると、植物や地球がぐぐっと近く感じられるように思います。

そんなジュースを提供する中でどうしてもでる「搾りかす」を微生物たちの力添えで分解、発酵させて、より豊かな土壌にするための堆肥として循環させる。

搾りかすをより健康でパワフルな植物が育つ土壌にしてそんな植物たちを搾ったジュースでまた自分たちがポジティブに、健康に暮らす「宇宙循環」をつくることができるのが「コンポスト」
コンポストに関してわかりにくいことや、解明できないこともたくさんある中で、それを当日集まっていただいた皆さんとの意見交換を通じて考えられたのは素晴らしい時間でした。

サンシャインジュース京都ラボがある浄土寺では月に1度コンポストワークショップを開催中。興味がある方はこのタイミングでぜひお集まりいただき、どう運用していくとより社会に実装できるのか、負荷なくごみを燃やさず資源として循環させることができるのかを考えていける機会にしたいと思っています。　詳細は @cosmic_compostのインスタグラムをご覧ください。

April 22 was Earth Day — a day to reflect on our relationship with the planet.

On this day, we hosted a fresh cold-pressed juice bar and a compost workshop at Ace Hotel Kyoto, using seasonal fruits and vegetables sourced from farmers in Kyoto and across Japan.

Drinking Sunshine Juice is a simple, direct way to take in the energy of the Earth.
Even something as simple as “drinking juice” can become a deeper experience — feeling it slowly enter your body, nourishing your cells, awakening your vitality.

And when you drink with awareness — thinking about the soil, the land, and the environment where these plants were grown — you begin to feel closer to nature, to plants, and to the Earth itself.

At the same time, the pulp that is inevitably created in the juicing process is not waste.
With the help of microorganisms, it is broken down and fermented, returning to the soil as rich compost.

This creates a living cycle —
soil → plants → juice → people → soil —
a kind of “cosmic circulation” where healthier soil grows more vibrant plants, and those plants support our own vitality and well-being.

There is still so much we don’t fully understand about these processes.
But being able to explore and exchange ideas together with everyone who gathered on that day made it a truly meaningful experience.

At our Kyoto Lab in Jodoji, we host a community compost workshop once a month.
